Cardamom
The dried ripe fruit (capsules of the cardamom plant) known as the “Queen of Spices” because of its exceptionally pleasing perfume and flavour is known as cardamom of trade. Different grades of Indian cardamom are marketed to overseas markets: ‘Alleppey Green Extra Bold’ (AGEB), ‘Alleppey Green Bold’ (AGB), and ‘Alleppey Green Superior’ (AGS) are names that have instant appeal globally. Cardamom oil is used in a variety of meals, perfumes, health foods, pharmaceuticals, and beverages.
Cardamom, both whole and powdered, is commonly used as a flavouring ingredient. It may lend a lasting glitter to all kinds of classic and modern Asian cuisines. It is used in baked goods and confectioneries in Scandinavian countries. It’s a common element in European and North American cuisines.
